  • Total: 30 mins
  • Yield: 30 cheese rolls

Ingredients

  • 4 cups tapioca flour
  • 1 1/4 cups milk
  • 1/2 cup water
  • 6 tablespoons oil
  • 1 1/2 cups grated parmesan cheese
  • 1 cup shredded Mozzarella cheese
  • 2 large eggs
  • 2 teaspoons salt

Instructions

Step 1

preheat oven to 400F degrees with a rack in the middle.

combine the milk, water, oil, and salt in a saucepan and bring to a boil over medium-high heat.

Step 2

Add the tapioca flour to the bowl of a stand mixer and once the milk mixture boils, pour it over the flour. Mix really well. The texture should be white and sticky!

Step 3

While the mixer is still on, add the eggs, one at a time. This will take a bit of time for the eggs to mix but you've got this babe! Then add the cheese a little at a time.

Step 4

Now it's time to get your hands a little dirty. Wet your hands with cold water and begin scooping the dough with a spoon. You want them to be the size of a golf ball or smaller.

Place the balls on a baking sheet covered with parchment paper and begin baking.

Step 5

Bake for 15-20 min or until they are golden and puffed! I can promise you that these will be gone in no time!
